Roasted Green Beans With Sun-Dried Tomatoes, Goat Cheese, And Olives
Serves 4
Ingredients
1 teaspoon extra-virgin olive oil
1 tablespoon lemon juice
1⁄2 cup oil-packed sun-dried tomatoes, rinsed, patted dry, and chopped coarse
1⁄2 cup pitted kalamata olives, chopped
2 teaspoons minced fresh oregano
1 recipe ROASTED GREEN BEANS
Salt and pepper
2 ounces crumbled goat cheese (1⁄2 cup)
Instructions
Combine oil, lemon juice, sun-dried tomatoes, olives, and oregano in medium bowl. Add beans and toss well to combine. Season with salt and pepper to taste, transfer to serving dish, top with goat cheese, and serve.
