Vegan Tofu Scramble With Mushrooms

Ingredients
2 tablespoons vegetable oil
1 small onion, chopped
1 clove garlic, minced
1 (18 ounce) package firm tofu, crumbled
1 cup sliced fresh mushrooms
1 tablespoon soy sauce
1 tablespoon chopped fresh parsley
Instructions
Step 1
Heat oil in a skillet over medium heat and cook onion until soft and translucent, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Add tofu and mushrooms and cook until tofu starts to brown, 8 to 10 minutes. Sir in soy sauce and parsley.
