Vegan Sour Cream (on the cheap)
2 Cups
Ingredients
1 (10.5-ounce) package firm silken tofu
2 tablespoons fresh lemon juice
1 tablespoon neutral vegetable oil
1 teaspoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
Instructions
Crumble the tofu into a blender or food processor. Add the remaining ingredients and process until smooth and well blended. Taste and adjust seasonings, if necessary. Transfer to a container with a tight-fitting lid and store in the refrigerator, where it will keep for several days.
