Vegan Coconut Macaroons

Ingredients
olive oil cooking spray (such as PAM®)
2 ½ cups unsweetened, flaked coconut
1 cup unbleached flour
¾ cup cashews
¾ cup water
½ cup turbinado raw sugar
½ teaspoon salt
½ teaspoon almond extract (optional)
Instructions
Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
Spray a baking sheet with cooking spray.
Step 3
Combine coconut and flour in a large bowl.
Step 4
Puree cashews, water, sugar, salt, and almond extract together in a blender.
Step 5
Stir cashew mixture into coconut mixture until well blended.
Step 6
Form coconut mixture into 1-inch balls and flatten; arrange on the prepared baking sheet.
Step 7
Bake cookies in the preheated oven until edges are golden, 12 to 15 minutes.
