Three-Grain Bread (Bread Machine Version) - Vegan

1 Loaf


1 1/3 cups warm water
1 tablespoon plus 1 teaspoon
vegan margarine, softened
3 tablespoons sugar
1 1/2 teaspoons salt
2 1/2 cups bread flour
1 cup fine yellow cornmeal
1/2 cup brown rice flour
2 1/2 teaspoons instant yeast


  1. Place the ingredients in the bread pan insert in the following order: water, margarine, sugar, salt, bread flour, cornmeal, and rice flour. Make an in- dentation and add the yeast.

  2. Place the insert in the bread maker and close the lid. Operate according to the manufacturer’s instructions to obtain a light-colored 2-pound loaf.

  3. When the loaf is done, remove it from pan and set it aside on a rack to cool for 30 minutes before slicing.
