Thai Chili Butter
Makes 1⁄2 Cup, Enough For 1 Recipe Pan-Seared Thick-Cut Strip Steaks
Ingredients
4 tablespoons unsalted butter, softened
1 tablespoon chopped fresh cilantro
2 teaspoons Asian chili-garlic sauce
1-1⁄2 teaspoons thinly sliced scallion, green part only
1⁄2 teaspoon red curry paste
1 small garlic clove, minced
2 teaspoons lime juice
Salt
Instructions
Beat butter vigorously with spoon until soft and fluffy. Add cilantro, chili-garlic sauce, scallion, red curry paste, and garlic; beat to incorporate. Add lime juice a little at a time, beating vigorously between each addition until fully incorporated. Season with salt to taste. Top each cooked steak with portion of flavored butter and serve.
If red curry paste isn’t available, increase the chili-garlic sauce to 2-1⁄2 teaspoons.
