Spanish Rice In The Pressure Cooker

Ingredients

2 cups uncooked instant long-grain rice (such as Uncle Ben's®)
1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)
1 3/4 cups water, or more as needed
1 large onion, chopped
1 small green bell pepper, chopped
1/4 cup salsa
1 1/2 teaspoons garlic powder
1/2 teaspoon chili powder, or to taste
salt and pepper to taste

Instructions

Combine rice, diced tomatoes, water, onion, green bell pepper, salsa, garlic powder, chili powder, salt, and pepper in a multi-functional pressure cooker. Close and lock the lid. Select the Rice function according to manufacturer's instructions; cook until rice is tender and flavors are blended, about 10 minutes. Allow 10 to 15 minutes for pressure to build.

Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
