Sesame Lemon Cucumber Salad
Serves 4
Ingredients
3 cucumbers (2 pounds), peeled, halved lengthwise, seeded, and sliced 1⁄4 inch thick
1 tablespoon salt
1⁄4 cup rice vinegar
1 tablespoon lemon juice
2 tablespoons toasted sesame oil
2 teaspoons sugar
1⁄8 teaspoon red pepper flakes, plus more to taste
1 tablespoon sesame seeds, toasted
Instructions
- Toss cucumber with salt in colander set over large bowl. Weight cucumbers with gallon-size zipper-lock bag filled with water; drain for 1 to 3 hours. Rinse and pat dry.
- Whisk remaining ingredients together in medium bowl. Add cucumbers; toss to coat. Serve chilled or at room temperature.
