Salsa in Season - Vegan

2 1/2 Cups

Ingredients

2 large ripe tomatoes, finely chopped
1 jalapeño, seeded and finely minced
1/4 cup minced yellow onion
3 tablespoons chopped fresh
cilantro, parsley, or basil Salt

Instructions

  1. Combine all the ingredients in a medium bowl and mix gently to combine. Cover and set aside for 20 to 30 minutes before serving.

  2. If not using right away, refrigerate until needed. The salsa tastes best if used on the same day that it’s made, but will keep for up to 2 days if properly stored.
