Orange Salsa With Cuban Flavors
Makes About 2-1⁄2 Cups
Ingredients
1⁄2 teaspoon grated orange zest plus 5 oranges peeled and segmented; each segment quartered crosswise
1⁄2 cup minced red onion
1 jalapeño chile, stemmed, seeds reserved, and minced
2 tablespoons lime juice
2 tablespoons minced fresh parsley
1 tablespoon extra-virgin olive oil
2 teaspoons packed brown sugar
1-1⁄2 teaspoons distilled white vinegar
1-1⁄2 teaspoons minced fresh oregano
1 garlic clove, minced
1⁄2 teaspoon ground cumin
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
Instructions
Combine all ingredients in medium bowl.
