Marinara Sauce - Vegan

7 Cups

Ingredients

2 tablespoons olive oil
1 medium yellow onion, finely
chopped
3 garlic cloves, minced
1/4 cup shredded carrot (optional)
2 tablespoons dried marjoram

Instructions

  1. In a large saucepan, heat the oil over medium heat. Add the onion, cover, and cook until soft, about 8 minutes. Add the garlic and cook for 30 seconds. Stir in the carrot, if using, and marjoram and basil and cook until the carrot is softened, about 5 minutes. (If necessary, add a tablespoon or two of water to keep from burning.) Stir in the tomatoes and sugar and bring to a boil.

  2. Reduce the heat to low, season with salt and pepper, and simmer until thickened, stirring occasionally, about 30 minutes. If not using right away, cool to room temperature and then store, tightly covered, in the refrigerator for up to 4 days. This sauce also keeps well in the freezer for several weeks.
