Make-Your-Own Mayo (Mayonnaise) - Vegan
1 Cup
Ingredients
1/2 cup unsalted raw cashews or sliced raw almonds
1 garlic clove, crushed
1/4 cup plain unsweetened soy milk
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/8 teaspoon ground cayenne
2 tablespoons olive oil
Instructions

In a high-speed blender, grind the cashews and garlic to a paste. Add the soy milk, vinegar, salt, and cayenne, and blend until smooth.

With the machine running, slowly add the oil in a thin stream until the mayo is creamy. Taste and adjust the seasonings.

Transfer to a small bowl or a jar, cover, and refrigerate until needed. Properly stored, it will keep in the refrigerator for 3 to 4 days.
