Lentils And Rice

1 yellow onion, diced
1-1.5lb diced chicken breast, sausage, or other protein (optional)
1 tablespoon olive oil
1 cup green lentils
1 cup white rice
4-5 cloves garlic, minced
1 quart water
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon oregano
1 teaspoon kosher salt
black pepper to taste
crumbled feta cheese (optional)


Dice the onion and saute in the tablespoon of olive oil in a large pot for 5-6 minutes until beginning to brown.

If adding chicken, sausage or other meat, add to the pot and brown on all sides.

Add the minced garlic and saute until fragrant.

Add water and lentils and bring to a boil. Once boiling reduce heat and simmer 5-10 minutes until lentils begin to soften. Skin should slide easily off a lentil.

Add rice, olive oil, vinegar, oregano, kosher salt, and black pepper. Cover and simmer for 30-40 minutes until most of the liquid is gone.

Serve topped with extra balsamic vinegar and feta cheese.
