Lentil & Bulgur Salad

Ingredients

1/2 cup dry french lentils
1/2 cup bulgur wheat
1/2 cup boiling water
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon dried oregano
1 tablespoon chopped fresh mint
1 1/2 tablespoons chopped fresh dill
freshly ground pepper, to taste
2 tablespoons chopped fresh parsley
1/4 cup minced red onion
1/4 cup finely chopped celery
1/2 cup crumbled feta cheese
toasted walnuts, as garnish

Instructions

Place the lentils in a small saucepan & cover with water. Bring just to a boil, reduce the heat to low & simmer, partially covered until the lentils are tender, but not mushy about 25 minutes.

While the lentils are cooking, place the bulgur wheat in a small bowl. Add the boiling water, stir & cover the bowl with plastic wrap. Let stand for 10-15 minutes, while you get the other ingredients ready.

Combine all the remaining ingredients in a mixing bowl. Drain the lentils & add them, along with the bulgur wheat & stir to combine.

This salad can be served right away, or chilled & served cold. Before serving, garnish with some chopped walnuts.
