Heinz® Butter Chicken

Submitted by: admin on April 10, 2020

6 servings

Ingredients

1 ½ pounds boneless, skinless chicken thighs
2 tablespoons butter
2 cloves garlic, minced
1 small onion, chopped
1 tablespoon Heinz Tomato Paste
2 teaspoons mild curry paste
1 teaspoon minced fresh ginger
1 teaspoon ground cinnamon
1 cup drained, canned stewed tomatoes
¾ cup Heinz Tomato Ketchup
⅔ cup plain yogurt
¼ cup light cream
2 teaspoons fresh lime juice
1 teaspoon finely grated lime zest
Hot cooked basmati or long grain rice
Chopped fresh coriander (optional)

Instructions

Step 1
Trim the chicken of any fat and cut into chunks. Heat half of the butter in a large skillet set over medium-high heat. Add the chicken in batches and brown all over. Transfer the browned meat to a plate. Reduce the heat to medium.

Step 2
Add the onion and garlic to the pan. Cook, stirring often, until golden, about 8 minutes. Stir in the tomato paste, curry paste, ginger and cinnamon. Cook for 1 minute. Stir in the ketchup, yogurt, cream, chicken pieces and any juices that have accumulated on the plate.

Step 3
Simmer, partially covered and stirring occasionally, for 15 minutes or until chicken is tender and sauce is thickened. Stir in the remaining butter, lime juice and lime zest just before serving. Serve over basmati rice and garnish with chopped coriander (if using).
