Grilled Corn Salsa
Makes About 2 Cups
Ingredients
2 ears grilled sweet corn, kernels cut from cobs (1 cup)
1 red bell pepper, stemmed, seeded, and chopped medium
1-1⁄2 tablespoons vegetable oil
1-1⁄2 tablespoons lime juice
1⁄2 jalapeño chile, stemmed, seeds reserved, and minced
1 tablespoon chopped fresh cilantro
1 scallion, sliced thin
1 teaspoon ground cumin
1 small garlic clove, minced
Salt
Instructions
Combine all ingredients in bowl and season with salt to taste. Serve.
