Green Beans with Bacon Vinaigrette

Ingredients
2 cups green beans, cut into 1 inch pieces
2 slices bacon
2 tablespoons red wine vinegar
1 tablespoon water
1 tablespoon sugar
2 teaspoons flour
salt to taste
fresh ground black pepper to taste
Instructions
- Fry bacon in a pan until crispy. Remove bacon and set aside.
- In the remaining bacon grease, add sugar and flour and stir to form a thick paste.
- Slowly add water and red wine vinegar and stir until the sauce forms a consistency of glue. Taste and adjust vinegar / water ratio to be more sweet or tart as desired.
- Chop / crumble bacon into small pieces and add to the sauce.
- Boil a pot of water and add beans. Boil for 1 - 2 minutes until just softened.
- Pour beans into a strainer and shake to remove excess water.
- Add beans to sauce and toss to coat. Add salt and pepper to taste. Serve warm.
