Green Beans Braised In Tomatoes

Serves 4 To 6

Ingredients

2 tablespoons olive oil
1 small onion, diced
1 garlic clove, minced
1 cup canned diced tomatoes
1 pound green beans, trimmed
Salt and pepper
2 tablespoons minced fresh parsley

Instructions

  1. Heat oil in 12-inch skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute. Add tomatoes and simmer until juices thicken slightly, about 5 minutes.
  2. Add green beans and 1⁄4 teaspoon salt, stir well, cover, and cook, stirring occasionally, until beans are crisp-tender, about 20 minutes. Stir in parsley, season with salt and pepper to taste, and serve immediately.
