Grapefruit And Basil Relish
Makes About 1 Cup
Ingredients
2 red grapefruits
2 tablespoons chopped fresh basil
1⁄2 small shallot, minced
2 teaspoons lemon juice
2 teaspoons extra-virgin olive oil
Salt and pepper
Instructions
Regular grapefruits can be substituted for the red grapefruits.
- Peel grapefruits, making sure to remove all pith, and cut into 1⁄2-inch pieces. Place pieces in fine-mesh strainer set over medium bowl and drain for 15 minutes.
- Pour off all but 1 tablespoon grapefruit juice from bowl; whisk in basil, shallot, lemon juice, and oil. Stir in grapefruit pieces and season with salt and pepper to taste.
