Farro Risotto

Serves 4 To 6

Ingredients

1 tablespoon olive oil
1 onion, chopped fine
1 carrot, peeled and chopped fine
Salt and pepper
3 garlic cloves, minced
1 teaspoon minced fresh thyme
1-1⁄2 cups farro
2 cups low-sodium chicken broth
1-1⁄2 cups water
2 tablespoons chopped fresh parsley
1 teaspoon lemon juice

Instructions

  1. Combine oil, onion, carrot, and 1⁄4 teaspoon salt in large saucepan. Cover and cook over medium-low heat, stirring occasionally, until vegetables are softened, 8 to 10 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds.
  2. Stir in farro and cook until lightly toasted, about 2 minutes. Stir in broth and water and bring to simmer. Reduce heat to low and continue to simmer, stirring often, until farro is tender, 20 to 25 minutes.
  3. Stir in parsley and lemon juice. Season with salt and pepper to taste and serve.
