Farro Risotto
Serves 4 To 6
Ingredients
1 tablespoon olive oil
1 onion, chopped fine
1 carrot, peeled and chopped fine
Salt and pepper
3 garlic cloves, minced
1 teaspoon minced fresh thyme
1-1⁄2 cups farro
2 cups low-sodium chicken broth
1-1⁄2 cups water
2 tablespoons chopped fresh parsley
1 teaspoon lemon juice
Instructions
- Combine oil, onion, carrot, and 1⁄4 teaspoon salt in large saucepan. Cover and cook over medium-low heat, stirring occasionally, until vegetables are softened, 8 to 10 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds.
- Stir in farro and cook until lightly toasted, about 2 minutes. Stir in broth and water and bring to simmer. Reduce heat to low and continue to simmer, stirring often, until farro is tender, 20 to 25 minutes.
- Stir in parsley and lemon juice. Season with salt and pepper to taste and serve.
