Easy Slow Cooker Thai Chicken With Basil

Ingredients

2 pounds skinless, boneless chicken breast, cubed
1 red bell pepper, cut into strips
¼ cup soy sauce
2 tablespoons fish sauce
3 fresh red Thai chile peppers, minced
1 tablespoon freshly squeezed lime juice
1 tablespoon rice vinegar
1 tablespoon finely grated fresh ginger
½ cup chopped Thai basil, or to taste
1 pinch salt and freshly ground black pepper to taste

Instructions

Step 1
Combine chicken, bell pepper, soy sauce, fish sauce, Thai chile, lime juice, rice vinegar, and ginger in a slow cooker.

Step 2
Cook on Low until chicken is tender, about 5 1/2 hours. Add basil and cook until wilted into the sauce, about 30 minutes more. Season with salt and pepper.
