Creamy Mushroom Gravy - Vegan

2 1/2 Cups

Ingredients

1 tablespoon olive oil
1/2 cup minced onion
2 garlic cloves, minced
1 1/2 cups chopped white mushrooms
2 tablespoons soy sauce
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups vegetable stock
1/4 cup plain unsweetened soy milk
2 tablespoons nutritional yeast
2 tablespoons cornstarch
1 teaspoon browning sauce, such as Kitchen Bouquet or Gravy Master

Instructions

  1. In a medium saucepan, heat the oil over medium heat. Add the onion, cover, and cook until softened, about 5 minutes. Add the garlic and mushrooms and cook, stirring, until softened. Stir in the soy sauce, thyme, salt, and pepper.

  2. Transfer the mushroom mixture to a high-speed blender. Add 3/4 cup of the vegetable stock and blend until smooth. Add the remaining ingredients and blend until smooth.

  3. Return the mixture to the same saucepan and bring to a boil, stirring constantly. Reduce heat to low and continue stirring until the gravy is thickened, about 3 minutes. Serve hot.
