Claudia's Yummy Frosting For Cakes And Cupcakes

Ingredients
4 cups confectioners' sugar
1 cup shortening
2 egg whites
1/2 teaspoon salt
2 teaspoons vanilla extract
2 1/2 tablespoons cake flour
1/4 cup low-fat milk
2 drops any color food coloring (optional)
Instructions
In a large bowl, combine the confectioners' sugar, shortening, egg whites, salt, vanilla, flour and milk. Beat with an electric mixer, gradually increasing to high speed, until light, fluffy and smooth, about 5 minutes. Stir in desired amount of food coloring.
