Cheater’s Fish Stock

Makes About 4 Cups

Ingredients

1 small onion, chopped
1 carrot, chopped
1 celery rib, chopped
8 sprigs fresh parsley
1 cup dry white wine
6 (8-ounce) bottles clam juice
2 bay leaves
8 whole black peppercorns
1⁄2 teaspoon dried thyme
Salt

Instructions

Bring all ingredients to boil in medium saucepan and simmer to blend flavors, about 30 minutes. Strain stock through cheesecloth, pressing on solids with back of spoon to extract as much liquid as possible. Season with salt to taste. Use immediately.
