Charmoula Sauce

Makes About 1⁄2 Cup; Enough For 1 Recipe Grilled Shrimp Skewers

Ingredients

1⁄4 cup extra-virgin olive oil
1 small red bell pepper, stemmed, seeded, and finely chopped
1⁄3 cup finely chopped red onion
3 garlic cloves, minced
1 teaspoon paprika
1⁄2 teaspoon ground cumin
1⁄4 teaspoon cayenne pepper
1⁄8 teaspoon salt
1⁄3 cup minced fresh cilantro
2 tablespoons fresh lemon juice

Instructions

Combine oil, bell pepper, onion, garlic, paprika, cumin, cayenne, and salt in aluminum pan. Cook over hot side of grill, stirring occasionally, until vegetables soften, 5 to 7 minutes. Move to cool side of grill and proceed to grill shrimp, adding cilantro and lemon juice just before serving.
