Bruschetta With Summer Squash, Bacon, And Blue Cheese

Serves 8 To 10

Ingredients

1 recipe TOASTED BREAD FOR BRUSCHETTA
5 tablespoons extra-virgin olive oil
4 slices bacon, minced
4 summer squash and/or zucchini, halved lengthwise, seeded and cut into matchsticks
1 tablespoon red wine vinegar
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
4 ounces blue cheese, crumbled (1 cup)
1⁄4 cup chopped fresh basil

Instructions

  1. Brush toasts with 3 tablespoons oil. Position oven rack 4 inches from broiler element and heat broiler. Cook bacon in 8-inch skillet over medium-high heat until crisp, about 5 minutes. Transfer to paper towel–lined plate.
  2. Combine squash, vinegar, remaining 2 tablespoons oil, salt, and pepper in medium bowl. Let stand 5 minutes, then fold in bacon, cheese, and basil.
  3. Divide mixture evenly among toasts. Broil bruschetta until cheese begins to melt, about 1-1⁄2 minutes. Serve immediately.
