Basmati Rice Pilaf

Serves 4

Ingredients

1 tablespoon vegetable oil
1 (3-inch) cinnamon stick, halved
2 green cardamom pods
2 whole cloves
1⁄4 cup thinly sliced onion
1 cup basmati rice
1-1⁄2 cups water
1 teaspoon salt

Instructions

  1. Heat oil in medium saucepan over high heat until almost smoking. Add cinnamon stick, cardamom, and cloves and cook, stirring, until they pop. Add onion and cook, stirring until translucent, about 2 minutes. Stir in rice and cook, stirring until fragrant, about 1 minute.
  2. Add water and salt; bring to boil. Reduce heat, cover tightly, and simmer until all water has been absorbed, about 17 minutes. Let stand, covered, for 10 minutes. Fluff rice with fork and serve.
