A Pot of Beans - Vegan
6 Cups
Ingredients
1 pound dried beans
2 garlic cloves, crushed
6 to 8 cups water
1 to 2 teaspoons salt (optional)
2 bay leaves
Instructions

Soak the beans overnight in enough water to cover.

Drain the beans and put them in a large pot with 6 to 8 cups of fresh water (older and larger beans will require more water). Cover the pot and bring to a boil. Reduce the heat to a simmer, add the bay leaves and garlic, and cook, partially covered, until the beans are tender, 1 to 3 hours, or longer, depending on the bean. (Add additional water if needed to keep the beans covered while cooking.)
- About halfway through cooking, add the salt, if using. When the beans are tender, drain them. They are now ready to use.
Variation: Slow-Cooker Method: Cook the beans in your slow cooker to save energy and free yourself from watching the pot. Simply place the soaked beans in your slow cooker with the water, bay leaves, garlic, and salt, if using. Put on the lid and turn the cooker on Low for 8 hours.
