30-Minute Mashed Potato Pizza

Ingredients
1 (13.8 ounce) can refrigerated pizza dough (such as Pillsbury®)
2 cups milk
1 (7.6 ounce) package mashed potato flakes (such as Hungry Jack®)
1 tablespoon butter
4 slices precooked thick-cut bacon, diced
4 cloves garlic, minced and divided
3 tablespoons olive oil
1 cup shredded mozzarella cheese
1 cup shredded sharp Cheddar cheese
Instructions
Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Roll pizza crust onto a baking sheet.
Step 3
Bake in the preheated oven for 5 minutes.
Step 4
While crust is prebaking, combine milk and mashed potatoes in a microwave-safe bowl. Cook in the microwave for 3 minutes. Add butter, bacon, and 2 cloves of garlic; stir until creamy.
Step 5
Remove crust from oven and leave oven on. Combine olive oil and remaining garlic in a small bowl and brush on top. Spread 1/2 cup mozzarella cheese over crust and spoon dollops of mashed potato mixture on top. Spread remaining mozzarella cheese and Cheddar cheese over the pizza.
Step 6
Bake in the hot oven until melted, about 20 minutes.
